How to trash your kitchen by 6:30 am!

Breakfast Parfaits (adapted from Giada on Food Network)

1/4 cup low fat Ricotta cheese
1 tablespoon greek yogurt, vanilla
1 packet of splenda

whisk together and then layer with a berry mixture:

1 teaspoon of any "just fruit" jelly, mix in bowl to coat any berries that look good.  I used raspberries and strawberries.

granola
sliced toasted almonds

I toasted the almonds a couple of days ago and it was very easy.  5 minutes in a 400 degree oven, stirring a couple of times.  

Now just layer everything however you like!  This would be such a fun breakfast to make for company, because it is so pretty and also filling.  Next time we have company I will serve these with coffee and juice and some toast on the side.  Yum!  

I got some containers with screw on lids and sent Mike to work with these twice this week.  It was a big hit with Audrey too!  Lauren was at school when I gave it to Audrey, because I think Lauren would have been very jealous.  :(  I will have to make a lactose and gluten free version, maybe with some rice cream and just serve it very cold!  She actually seems to be more sensitive to gluten- when I loosen up too much on the gluten part of her diet she gets these terrible dark circles under her eyes (allergy circles) and has all kinds of gastric issues.  She can tolerate a tiny amount of lactose with no major issues which is nice. 

Today will be fun and busy!  We have library day this morning and a big afternoon outside play date.  And I have to do 6 loads of laundry and take out the trash.  I was going to do a bunch of housework yesterday but instead I avoided work and went for a run.  It was so fun- the wind was blowing from the west at about 40 mph so I headed west first.  I could barely hear my ipod because of the wind and when I unzipped my jacket it became a cape!  Superman!  Damn that felt good!  I ran three miles out and then let the wind just blow me home.  Every run should be like that.  I have started thinking about running a half marathon in April. I am already running far enough, but I probably need to get a little bit faster so they don't come looking for me after the race closes.  Hm, maybe I will!  

Diet update.  Did we talk enough about food yet?  One of the side effects of prilosec is bloating and I am SO THERE.  After you reduce your stomach acid for a long time you end up with slow digestion and it can bloat you.  I have only 2 more weeks of the prilosec so I think I will just wear loose clothes and finish this thing but I am so big that people are going to start congratulating me on my pregnancy!  Other than that completely uncomfortable side effect I am so well.  My ulcer isn't even detectable right now.  I can barely remember what it felt like!  How great!  Other than the occasional cheat I have really followed the diet which is quite an accomplishment when you are as susceptible to temptation as I am.

PS The crock pot chicken was gross.  I considered posting the recipe so you don't accidentally make it but I am tired of typing.  Some other time!  I am going to make the kids eat it for playdate lunch just to get it out of the house.  ha!
